Key Responsibilities

  • Assist the Head Chef in daily kitchen operations, including menu planning, food preparation, and cooking.
  • Supervise, train, and mentor junior kitchen staff, fostering a positive and productive team environment.
  • Ensure all dishes are prepared and presented according to established recipes, quality standards, and portion controls.
  • Manage inventory, including ordering, receiving, and proper storage of food supplies to minimize waste.
  • Uphold the highest standards of food hygiene, sanitation, and safety within the kitchen.
  • Contribute to menu development and innovation, bringing creative ideas to enhance our culinary offerings.
  • Oversee kitchen equipment maintenance and cleanliness.
  • Manage kitchen during the Head Chef's absence, ensuring seamless service and operations.
  • Monitor food costs and assist in maintaining budget controls.
  • Collaborate with front-of-house staff to ensure smooth service flow and guest satisfaction.

Required Skills

  • Proven experience as a Sous Chef or highly skilled Chef de Partie in a busy kitchen environment (minimum 4 years).
  • Strong culinary skills across various cooking techniques and cuisines.
  • Excellent leadership and team management abilities.
  • Thorough knowledge of food safety regulations and hygiene standards (HACCP).
  • Ability to work efficiently under pressure and in a fast-paced setting.
  • Exceptional attention to detail in food preparation and presentation.
  • Strong communication and interpersonal skills.
  • Proficiency in inventory management and ordering.

Preferred Qualifications

  • NVQ Level 3 in Professional Cookery or equivalent culinary qualification.
  • Experience with Scottish produce and contemporary British cuisine.
  • Advanced Food Hygiene Certificate (e.g., REHIS Intermediate Food Hygiene).
  • A track record of successful menu development contributions.
  • Experience working in a similar pub/restaurant environment known for quality food.
