Job Description
We are seeking a highly skilled and passionate Sous Chef, with a strong focus on preparation and an assistant chef mindset, to join the esteemed culinary team at Bloomfield Great House. This pivotal role on Grove Road, Mandeville, will see you working closely with our Head Chef, playing a crucial part in the daily operations of our busy kitchen. You will be instrumental in the meticulous preparation of ingredients, ensuring all mise en place is executed to the highest standards of quality, consistency, and hygiene, ready for service across all our dining areas and events. Beyond preparation, you will act as a true assistant, providing leadership and mentorship to junior kitchen staff, overseeing stations, and stepping in for the Head Chef when necessary. Key Responsibilities
- Assist the Head Chef in the daily operations and management of the kitchen, particularly focusing on food preparation and mise en place.
- Oversee and actively participate in the preparation of all food items, ensuring consistent quality, taste, and presentation.
- Supervise, train, and mentor junior kitchen staff, delegating tasks effectively and ensuring adherence to recipes and standards.
- Manage kitchen inventory, including ordering, receiving, and proper storage of ingredients to minimize waste.
- Ensure strict compliance with all food safety, sanitation, and hygiene regulations (HACCP) at all times.
- Contribute to menu development, recipe creation, and special event planning, bringing innovative ideas to the table.
- Monitor food stock levels, conduct inventory checks, and assist with cost control measures.
- Maintain a clean, organized, and efficient kitchen work environment.
- Operate and maintain all kitchen equipment safely and efficiently.
- Step in for the Head Chef in their absence, ensuring seamless kitchen operations and high service standards.
Required Skills
- Proven experience as a Sous Chef or Senior Chef de Partie in a reputable kitchen environment.
- Exceptional knife skills and comprehensive knowledge of various cooking methods and ingredients.
- Strong leadership and team management abilities.
- Excellent organizational and time-management skills.
- In-depth understanding of food safety and sanitation regulations (HACCP).
