Key Responsibilities
- Develop and implement new dessert menus, daily specials, and artisanal baked goods, aligning with culinary trends and guest preferences.
- Oversee the daily production of all pastry items, including breads, cakes, tarts, cookies, chocolates, and ice creams, ensuring consistent quality and impeccable presentation.
- Manage inventory for the pastry section, including ordering, receiving, and proper storage of ingredients to minimize waste and control costs effectively.
- Ensure strict adherence to food safety, hygiene, and sanitation standards (e.g., HACCP) in all pastry operations, maintaining a clean and organized workstation at all times.
- Train, supervise, and mentor junior pastry cooks and apprentices, fostering a positive, collaborative, and productive work environment.
- Collaborate closely with the Executive Chef and other kitchen departments to ensure smooth kitchen operations and seamless integration of pastry items into overall dining services.
- Maintain all pastry equipment in good working order, promptly reporting any maintenance needs to ensure continuous operation.
- Innovate and experiment with new ingredients, techniques, and presentations to continuously enhance the guest culinary experience.
- Monitor portion control and waste management to optimize profitability while upholding quality standards.
Required Skills
- Advanced proficiency in a wide range of baking and pastry techniques.
