Key Responsibilities
- Cut, trim, bone, and grind various types of meat (beef, pork, poultry, lamb) according to company specifications and customer orders.
- Operate and maintain meat processing equipment, including saws, slicers, grinders, and packaging machinery, ensuring safe and efficient operation.
- Prepare and package meat products for display, ensuring proper labeling, dating, and presentation.
- Monitor product quality, freshness, and appearance, adhering to strict hygiene and sanitation standards.
- Receive, inspect, and store meat deliveries, verifying quality and quantity against invoices.
- Clean and sanitize workstations, tools, and equipment regularly, following all food safety (HACCP) guidelines and store procedures.
- Assist with inventory management, including rotating stock and minimizing waste.
- Adhere to all safety regulations and company policies, contributing to a safe working environment.
- Provide support to the Meat Department team as needed, fostering a collaborative atmosphere and contributing to overall departmental goals.
Required Skills
- Demonstrated proficiency in meat cutting and trimming techniques.
- Ability to safely operate and maintain meat processing equipment.
- Strong understanding of food safety and sanitation principles (HACCP experience preferred).
- Excellent attention to detail and ability to follow precise instructions.
- Physical stamina to stand for extended periods, lift heavy items (up to 50 lbs), and work in a refrigerated environment.
- Ability to work effectively in a fast-paced team environment.
- Basic English communication skills (reading, writing, and speaking) for safety and instruction adherence.
- Commitment to quality and customer satisfaction.
Preferred Qualifications
- 1-2 years of experience in meat processing, butchery, or a related food production role.
- Formal culinary or meat processing training/certification.
- Knowledge of different meat cuts and their applications.
- Current food handler's permit or certification in California.
