Key Responsibilities
- Develop and execute innovative pastry and dessert menus, including cakes, cookies, tarts, and other baked goods, reflecting seasonal availability and customer preferences.
- Oversee the daily production of all pastry items, ensuring consistent quality, adherence to recipes, and timely execution.
- Manage and mentor a team of pastry assistants and bakers, providing clear direction, training, and performance feedback.
- Maintain strict adherence to food safety and sanitation standards (HACCP, local health codes) in all aspects of pastry preparation and storage.
- Monitor inventory of baking ingredients, place orders, and manage supplier relationships to ensure optimal stock levels and cost efficiency.
- Ensure proper maintenance and cleanliness of all pastry equipment and work areas.
- Contribute to cost control by minimizing waste and optimizing ingredient usage.
- Collaborate with the broader kitchen and front-of-house teams to ensure seamless service and customer satisfaction.
- Stay abreast of industry trends, new techniques, and emerging ingredients to keep our offerings fresh and exciting.
- Assist in special event planning and custom order fulfillment, including designing bespoke dessert creations.
Required Skills
- Minimum of 3 years of progressive experience as a Pastry Chef or Lead Baker in a reputable bakery, restaurant, or hotel.
- Proven expertise in a wide range of pastry techniques, including laminated doughs, French pastries, cake decorating, and confectionary.
- Strong understanding of food safety regulations and best practices.
- Ability to manage and motivate a small team effectively.
- Exceptional creativity, attention to detail, and artistic presentation skills.
- Proficiency in inventory management and cost control.
