Job Description
We are seeking a highly creative, dynamic, and experienced Executive Chef to lead our culinary team at Canonnier Beachcomber Golf Resort & Spa, one of our premier properties known for its vibrant atmosphere and diverse gastronomic offerings. Key Responsibilities
- Lead and manage all culinary operations, including menu planning, food preparation, and kitchen staff management across all outlets.
- Develop innovative and diverse menus that cater to various tastes, dietary restrictions, and reflect the quality standards of Beachcomber.
- Ensure the highest standards of food quality, presentation, and taste are consistently met.
- Oversee inventory management, procurement, and cost control, ensuring efficient kitchen operations and adherence to budget.
- Recruit, train, mentor, and motivate a large culinary team, fostering a positive and productive work environment.
- Implement and enforce strict hygiene, sanitation, and safety standards (HACCP) in compliance with local regulations and company policies.
- Manage kitchen budgets, labor costs, and food costs effectively to maximize profitability without compromising quality.
- Collaborate with the F&B Manager and other department heads to align culinary offerings with overall resort strategy and guest experience.
- Stay abreast of global culinary trends and introduce new concepts and techniques to keep dining experiences fresh and exciting.
- Handle guest feedback and special requests efficiently and professionally, ensuring complete guest satisfaction.
- Plan and execute special events, banquets, and themed dinners, ensuring seamless delivery and exceptional quality.
Required Skills
- Minimum of 10 years of progressive culinary experience, with at least 5 years in an Executive Chef or Head Chef role within a luxury hotel or resort environment.
- Proven expertise in international cuisine, with a strong understanding of Mauritian flavors and local produce.
- Exceptional leadership and team management skills, with a track record of inspiring and developing culinary professionals.
- Strong financial acumen, including budgeting, cost control, and inventory management.
- Demonstrable creativity and innovation in menu development and food presentation.
- Comprehensive knowledge of food safety, hygiene, and HACCP regulations.
- Excellent communication and interpersonal skills, capable of interacting effectively with guests, staff, and suppliers.
- Ability to work under pressure in a fast-paced environment while maintaining high standards.
- Fluency in English (written and spoken) is essential.
Preferred Qualifications
- Culinary degree or equivalent professional qualification from a recognized institution.
- Experience working in a multi-outlet resort or hotel complex.
- Prior experience in island or remote resort operations.
- Fluency in French is a significant advantage.
- Exposure to Michelin-starred or equivalent fine dining environments.
