Key Responsibilities
- Prepare and cook a variety of dishes, including traditional Congolese cuisine and international meals, for lodge guests and domestic staff.
- Ensure all food is prepared to the highest standards of taste, quality, and presentation.
- Manage kitchen inventory, including ordering, receiving, and proper storage of ingredients.
- Maintain a clean, organized, and hygienic kitchen environment in accordance with health and safety regulations.
- Develop menus in collaboration with management, considering seasonality, guest preferences, and dietary restrictions.
- Monitor food costs and minimize waste through efficient portion control and inventory management.
- Operate and maintain kitchen equipment safely and effectively.
- Train and mentor junior kitchen staff, if applicable, fostering a positive learning environment.
- Adhere to all food safety protocols and company policies, ensuring compliance at all times.
- Handle special requests and cater to individual dietary needs as required, demonstrating flexibility and guest-centric service.
Required Skills
- Proven experience as a Cook, Chef, or in a similar role (minimum 3 years).
- Strong knowledge of various cooking methods, ingredients, equipment, and procedures.
- Proficiency in preparing both Congolese and international cuisines.
- Excellent understanding of food safety and hygiene regulations (HACCP principles preferred).
- Ability to work independently and as part of a team in a fast-paced environment.
- Exceptional organizational and time management skills.
- Attention to detail and a passion for culinary excellence.
- Physical stamina to stand for long periods and lift heavy items.
- Strong communication skills.
Preferred Qualifications
- Culinary degree or relevant certification from a recognized institution.
- Experience working in a hotel, lodge, or private residence setting.
- Knowledge of local Kasaï food traditions and ingredients.
- Fluency in French and basic English; knowledge of Tshiluba is a plus.
- First Aid and Food Handler's certification.
