Job Description

Key Responsibilities
- Oversee and manage all aspects of kitchen operations, including food preparation, cooking, and presentation, ensuring the highest quality standards.
- Develop and refine menus, incorporating seasonal ingredients, classic Creole techniques, and innovative culinary concepts.
- Manage kitchen staff, including hiring, training, scheduling, performance evaluations, and fostering a positive, productive work environment.
- Ensure strict adherence to all health and safety regulations, including HACCP, sanitation, and food storage protocols.
- Control food costs by managing inventory, minimizing waste, and optimizing portion control.
- Collaborate with the General Manager and other department heads to ensure seamless restaurant operations and guest satisfaction.
- Maintain kitchen equipment and cleanliness standards to the highest level.
- Actively participate in special events, catering functions, and promotional activities.
- Uphold and enhance Brennan's reputation for culinary excellence and exceptional guest experiences.
Required Skills
- Minimum of 5 years of progressive experience in a high-volume, fine-dining kitchen, with at least 2 years in a leadership role (Sous Chef or higher).
- Proven expertise in Creole, French, or Southern American cuisine.
- Strong leadership and team management abilities.
- Exceptional culinary skills, creativity, and a passion for food innovation.
- Excellent knowledge of food safety and sanitation standards (HACCP certified preferred).
- Proficiency in inventory management, cost control, and kitchen budgeting.
- Ability to work efficiently under pressure and maintain composure in a demanding environment.
- Strong communication and interpersonal skills.
- Culinary degree or equivalent professional culinary training.
Preferred Qualifications
- Experience working in a Michelin-starred or James Beard Award-winning establishment.
- Deep understanding of New Orleans' unique culinary history and local purveyors.
- Advanced certifications in culinary arts or hospitality management.
