Key Responsibilities

  • Plan, design, and execute daily menus for breakfast, lunch, and dinner services, skillfully incorporating a balanced blend of popular Continental dishes and authentic, traditional Congolese specialties.
  • Oversee all aspects of food preparation, cooking, and presentation, ensuring consistency, high quality, and adherence to Hotel L'Équateur's rigorous culinary standards.
  • Effectively manage kitchen inventory, including strategic ordering of supplies, meticulous receiving of deliveries, and proactive minimization of food waste to optimize costs without compromising ingredient quality or freshness.
  • Train, mentor, and supervise kitchen staff, fostering a positive, collaborative, and productive work environment that encourages growth and skill development.
  • Ensure strict compliance with all relevant health, safety, and hygiene regulations, including adherence to HACCP principles where applicable, to maintain a spotless and safe kitchen.
  • Innovate and develop exciting new recipes and culinary offerings, continuously exploring and utilizing seasonal and locally sourced ingredients to create unique dining experiences.
  • Collaborate closely with the Restaurant Manager to coordinate and execute special events, banquets, catering, and customized dining experiences for discerning guests.
  • Continuously monitor food quality, taste, and presentation, conducting regular taste tests and inspections to ensure every dish meets our exacting standards.
  • Oversee the proper maintenance and operation of all kitchen equipment, ensuring cleanliness and functionality.

Required Skills

  • Proven experience as a Chef with a demonstrated specialization in both Continental and Local African (specifically Congolese) cuisine.
  • Strong leadership and exceptional team management abilities, with a track record of motivating and developing kitchen staff.
  • Excellent knowledge of advanced food preparation techniques, contemporary culinary trends, and efficient kitchen management practices.
  • Exceptional creativity, innovative thinking, and an acute eye for detail in food presentation.
  • Thorough understanding and strict adherence to food safety and sanitation regulations.
  • Ability to work efficiently, calmly, and effectively under pressure in a fast-paced, high-volume kitchen environment.
  • Proficiency in inventory management, cost control, and budget adherence within a culinary setting.

Preferred Qualifications

  • Culinary degree or diploma from a recognized and reputable culinary institution.
  • Fluency in French and/or Swahili to effectively communicate with staff and guests.
  • Extensive experience working in a hotel or upscale restaurant setting, preferably in a supervisory role.
  • In-depth knowledge of various dietary restrictions, allergen management, and special meal preparation.
