Key Responsibilities

  • Directly assist the Head Chef in all aspects of kitchen management and food production, with a primary focus on mise en place and ingredient preparation.
  • Oversee and actively participate in the preparation, seasoning, and cooking of ingredients, ensuring adherence to recipes and quality standards.
  • Manage daily inventory of produce, proteins, and pantry items, ensuring proper rotation, storage, and minimizing waste.
  • Conduct thorough quality checks on all incoming ingredients to ensure freshness and compliance with Jake's Hotel's high standards.
  • Lead and train junior kitchen staff in proper preparation techniques, knife skills, food safety, and hygiene protocols.
  • Maintain a clean, organized, and efficient kitchen environment at all times, strictly adhering to all health and safety regulations.
  • Assist in menu development and recipe refinement, contributing creative ideas for seasonal specials and daily offerings.
  • Ensure all food items are prepared on time and to the specified quality and presentation standards for all dining services.
  • Monitor equipment functionality and cleanliness, reporting any maintenance issues promptly.
  • Collaborate effectively with front-of-house staff to ensure seamless service and guest satisfaction.

Required Skills

  • Proven experience as a Sous Chef or a highly skilled Chef de Partie with a strong background in food preparation.
  • Exceptional knife skills and a comprehensive understanding of various cooking methods and ingredients.
  • In-depth knowledge of food safety regulations (HACCP principles) and kitchen hygiene.
  • Strong organizational and time management abilities, with meticulous attention to detail.
  • Ability to lead and motivate a kitchen team in a high-pressure environment.
  • Excellent communication and interpersonal skills.
  • Proficiency in inventory management and waste control.
  • Creativity and a passion for developing and presenting high-quality dishes.

Preferred Qualifications

  • Culinary degree or equivalent professional certification from a recognized institution.

  • Prior experience in a resort or boutique hotel setting.
