As a Skilled Chef, you will be instrumental in maintaining and elevating our reputation for delicious, high-quality pub fare and daily specials. You will work closely with our Head Chef, contributing actively to menu development, ensuring the highest standards of food preparation, presentation, and kitchen hygiene are consistently met. Key Responsibilities
- Prepare and cook a wide range of dishes, ensuring consistent high standards of quality and presentation.
- Assist the Head Chef in menu planning, development, and costing, contributing creative ideas.
- Maintain an impeccably clean and organised kitchen environment, adhering strictly to all food safety and hygiene regulations (HACCP).
- Manage stock levels, place orders, minimise waste, and ensure efficient and economical use of all ingredients.
- Supervise and mentor junior kitchen staff, fostering a positive, respectful, and productive team dynamic.
- Ensure all dishes are prepared and served according to established recipes, portion control guidelines, and presentation standards.
- Operate and maintain all kitchen equipment safely and efficiently, reporting any malfunctions promptly.
- Contribute to a positive and collaborative working environment, communicating effectively with front-of-house staff.
- Handle special dietary requests and ensure allergen information is accurately communicated to relevant staff.
- Adhere strictly to all health and safety standards in all aspects of kitchen operations.
Required Skills
- Proven experience as a Chef in a professional kitchen environment (minimum 3 years).
- Demonstrable expertise in various cooking techniques and culinary styles relevant to gastropub fare.
- Strong understanding and practical application of food safety and hygiene regulations (HACCP).
- Ability to work efficiently and calmly under pressure, managing multiple tasks and priorities.
- Excellent communication and teamwork skills, fostering a harmonious kitchen atmosphere.
- Creativity and a genuine passion for food, recipe development, and culinary innovation.
- Strong organisational and time management abilities to ensure smooth kitchen operations.
- Adaptability to changing menus, seasonal ingredients, and customer demands.
Preferred Qualifications
- NVQ Level 2/3 in Professional Cookery or an equivalent recognised culinary qualification.
- Previous experience working with locally sourced and seasonal ingredients.
- Prior experience in a pub or gastropub setting, ideally with exposure to British cuisine.
- Knowledge of Welsh culinary traditions and local produce.
- First Aid certification is desirable.
