Key Responsibilities

  • Manage and oversee the daily operations of a specific kitchen section (e.g., saucier, entremetier, garde manger).
  • Prepare and cook menu items according to established recipes, quality standards, and portion control guidelines.
  • Ensure all food preparation and presentation meet the highest standards of Fairmont Le Château Frontenac.
  • Supervise and train junior cooks and apprentices, fostering a positive and productive work environment.
  • Maintain strict inventory control, minimize waste, and ensure proper storage of ingredients.
  • Adhere to all health, safety, and hygiene regulations, including HACCP standards.
  • Collaborate with the Sous Chef and Executive Chef on menu development and special events.
  • Monitor food costs and contribute to efficient kitchen operations.
  • Assist with ordering and receiving supplies as needed.
  • Ensure timely execution of all dishes during service periods.

Required Skills

  • Minimum 3 years of progressive experience as a Chef de Partie or a similar supervisory role in a high-volume, quality culinary environment.
  • Proven expertise in various cooking techniques and kitchen stations.
  • Strong understanding of food safety and sanitation principles (HACCP certification preferred).
  • Ability to work effectively under pressure and in a fast-paced environment.
  • Excellent leadership, communication, and interpersonal skills.
  • Demonstrated creativity and passion for culinary arts.
  • Ability to stand for extended periods and lift moderate weights.
  • Fluency in English (working knowledge of French is an asset).

Preferred Qualifications

  • Culinary diploma or degree from a recognized institution.
  • Experience working in luxury hotel environments or fine dining restaurants.
  • Prior international work experience.
  • Working knowledge of French.
  • Familiarity with Quebecois cuisine and local ingredients.
