We are actively seeking a talented and passionate Chef de Partie to become an integral part of our vibrant culinary team at one of our prestigious hotels in Northern Ireland. Key Responsibilities
- Manage and oversee a specific kitchen section (e.g., Larder, Sauce, Pastry), ensuring seamless operation and high-quality output.
- Prepare, cook, and present a variety of dishes strictly adhering to company recipes, specifications, and presentation standards.
- Monitor and control stock levels, inventory, and wastage within your designated section.
- Strictly comply with all food safety and hygiene regulations, including HACCP procedures, at all times.
- Provide guidance, training, and support to Commis Chefs and other junior kitchen staff.
- Collaborate with the Head Chef and Sous Chef on menu development, special events, and new culinary techniques.
- Maintain a clean, organized, and efficient workstation and overall kitchen area.
- Assist with the receiving, checking, and proper storage of deliveries.
- Contribute positively to team morale and foster a collaborative kitchen environment.
- Adapt swiftly to changing demands, guest preferences, and high-pressure situations during service periods.
Required Skills
- Minimum of 2 years of proven experience as a Chef de Partie or a highly skilled Demi Chef de Partie.
- Demonstrable excellent culinary skills and a comprehensive understanding of various cooking methods, ingredients, and kitchen equipment.
- Solid knowledge and practical application of food safety and hygiene standards (HACCP certification preferred).
- Ability to thrive and perform effectively in a fast-paced and demanding kitchen environment.
- Strong interpersonal and communication skills for effective teamwork and staff supervision.
- Keen attention to detail in food preparation and artistic presentation.
- Proven capability to manage and effectively train junior kitchen personnel.
- Flexibility to work varying shifts, including evenings, weekends, and public holidays, as is customary in the hospitality sector.
Preferred Qualifications
- A formal culinary degree or relevant professional certification from a recognized culinary institution.
- Previous experience working within a 4-star or 5-star hotel or fine dining restaurant setting.
- Familiarity with local Northern Irish produce and a passion for regional cuisine.
- Proficiency in English, both written and spoken, for clear communication within the kitchen.
- Experience with international cuisines and diverse culinary techniques.
